Sausage with Peppers and Onions Easy Weeknight Dinner

The meal I make when I don't feel like cooking! Easy sausage with peppers and onions is a quick weeknight dinner with all the necessities to make it feel like a complete meal!

Serves: 4
Prep Time: 15 minutes
Cook Time: 20 minutes
Ingredients | Instructions |

| Step 1 In a large pan, cook sausages on medium heat. Brown all sides of the sausage and cook until almost fully cooked, about 10 minutes. |
| Step 2 Remove sausages from pan, slice and set aside. |
| Step 3 In the same pan, add olive oil and sliced bell peppers. Cook on medium heat for 2-3 minutes, until the peppers just begin to soften. Stir often so they do not burn. |
| Step 4 Add sliced onions into the same pan and cook 2 minutes. Stir often. Once they begin to soften, stir in the tomato paste and spices. Stir and cook for 2 minutes. |
| Step 5 Add sliced sausages back into the pan and mix to combine. Cook on medium-low heat for 5 minutes to be sure sausages are cooked and spices are mixed in. If you would like more sauce, add in a splash of water at this point. |
| Step 6 Serve over rice and optionally with a fried egg. Enjoy! |
