Creamy Chicken Curry

Easy weeknight dinner for anyone. Not spicy!

Serves: 4

Prep Time: 15 minutes

Cook Time: 20 minutes


Ingredients

Instructions

  • 6 boneless skinless chicken thighs (or breasts), cut into bite-sized pieces

Step 1 Season chicken with salt, pepper, curry powder, paprika, and turmeric.

  • 1 Tbsp olive oil

Step 2 Heat oil in a skillet over medium-high heat and sear chicken until golden brown. Chicken does not need to be fully cooked through - but close. Remove and set aside.

  • 1 yellow onion, finely diced

Step 3 In the same pan, reduce heat to medium . Add onion and cook 4-5 minutes, until soft. Stir in garlic and ginger; cook 30 seconds.

  • 4 cloves garlic, minced

Step 4   Stir in tomato paste and chicken broth. Mix to combine then add heavy cream and mix again.

  • 1 Tbsp fresh ginger, minced

Step 5   Return chicken to the pan. Simmer uncovered for 10-12 minutes until the sauce thickens and chicken is cooked through.

  • 2 Tbsp curry powder

Step 6   Taste and adjust salt or spice. Serve over rice. Enjoy!

  • 2 Tbsp paprika


  • 1 tsp ground turmeric


  • salt and pepper, to taste


  • 1 cup chicken broth


  • 1 Tbsp tomato paste


  • 1 cup heavy cream


  • 1 tsp granulated sugar (Optional)
