Easy Vodka Sauce Pasta Recipe (Paccheri alla vodka)

Ingredients

Instructions

  • 4 sweet or hot Italian sausages (no casing)

Step 1 Cook sausage in a pan until browned. Break it up into small pieces as it cooks. Remove from pan and set aside.

  • 2 Tbsp butter

Step 2 In the same pan, add butter and a small amount of olive oil. Saute onions on medium heat until they begin to soften (about 3-5 minutes). Add garlic, stir and cook 30 seconds.

  • 1 yellow onion, diced

Step 3 In the same pan, add tomato paste. Stir and cook for 2-3 minutes.

  • 3 cloves garlic, minced

Step 4   Pour in vodka (if using), and simmer on medium heat for 2-3 minutes until most of the liquid is gone and a thicker mixture is left.

  • 6 oz can tomato paste

Step 5   Stir in heavy cream, sausage, and spices. Mix and simmer for 3 minutes.

  • 1/2 box pasta of choice (I use paccheri), cooked (reserve 1 cup pasta water)

Step 6   Add cooked pasta and grated parmesan cheese. If the sauce is too thick, add a splash of pasta water. Top with more parmesan cheese. Enjoy!

  • 1/4 cup vodka (optional, but recommended for recipe)


  • 1 cup heavy cream


  • salt, black pepper, red pepper flakes to taste


  • parmesan cheese, freshly grated (about 1/4 cup)
